I like this idea - and it could be a cool way to increase people relating to one another. You do have some attention to spice in southern bbq and creole food (although in the former 'sweet' is often favored, and 'spice' is like a challenge). It needs to be seem as something that is in combination with other flavors for overall richness - not just a shock.
