Less capital intensive and more mobile, food carts serving healthy options could be a great way to increase food access/security in places like large public housing projects (as storefront space is limited).
First carts to pop up by York Street back in the early 2000s were Halal carts. Not healthy, but delicious. Also, anything mexican.
